- 2 1/4 cups flour
- 1 tsp baking soda
- 2 tbsp ground ginger
- 1/2 tsp cinnamon
- 1/4 tsp cloves
- 1/4 tsp salt
- 3/4 cup butter, room temperature
- 1 cup brown sugar
- 1 egg
- 1/4 cup molasses (or milk)
- 1/2 tsp lemon zest

To make...
- Preheat oven to 350F.
- Stir flour with baking soda, ginger, cinnamon, cloves and salt.
- Beat butter with brown sugar until light and fluffy.
- Beat in egg, molasses/milk, and zest. It may look a little curdled - don't worry!
- Gradually beat in flour mixture.
- Roll dough into tbsp-sized balls.
- Place on baking sheet, pressing a pecan on top.
- Bake for 12 mins (cookies will be puffed and slightly golden)
- Cool and eat!
