Ginger Clove Cookies

You'll need...

  • 2 1/4 cups flour
  • 1 tsp baking soda
  • 2 tbsp ground ginger
  • 1/2 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp salt
  • 3/4 cup butter, room temperature
  • 1 cup brown sugar
  • 1 egg
  • 1/4 cup molasses (or milk)
  • 1/2 tsp lemon zest
  • halved pecans

To make...
  1. Preheat oven to 350F.
  2. Stir flour with baking soda, ginger, cinnamon, cloves and salt.
  3. Beat butter with brown sugar until light and fluffy.
  4. Beat in egg, molasses/milk, and zest. It may look a little curdled - don't worry!
  5. Gradually beat in flour mixture.
  6. Roll dough into tbsp-sized balls.
  7. Place on baking sheet, pressing a pecan on top.
  8. Bake for 12 mins (cookies will be puffed and slightly golden)
  9. Cool and eat!
