Ginger Clove Cookies

You'll need...

  • 2 1/4 cups flour
  • 1 tsp baking soda
  • 2 tbsp ground ginger
  • 1/2 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp salt
  • 3/4 cup butter, room temperature
  • 1 cup brown sugar
  • 1 egg
  • 1/4 cup molasses (or milk)
  • 1/2 tsp lemon zest
  • halved pecans

To make...
  1. Preheat oven to 350F.
  2. Stir flour with baking soda, ginger, cinnamon, cloves and salt.
  3. Beat butter with brown sugar until light and fluffy.
  4. Beat in egg, molasses/milk, and zest. It may look a little curdled - don't worry!
  5. Gradually beat in flour mixture.
  6. Roll dough into tbsp-sized balls.
  7. Place on baking sheet, pressing a pecan on top.
  8. Bake for 12 mins (cookies will be puffed and slightly golden)
  9. Cool and eat!

Chipotle Potato Salad

You'll need....

  • 6-10 boiled potatoes skins on (chilled)
  • 2 generous tsp chipotle powder
  • 3-4 tbsp mayonnaise
  • 1 tsp salt
  • ground pepper
  • 1/2 cup chopped pickles
  • 3 tbsp. pickle juice
  • sunflower seeds
  • 2-3 hard boiled eggs
  • green onions, chopped
  • 1 garlic clove, minced

To make...
  1. In large bowl, mix together garlic, mayonnaise, salt, pepper, chipotle powder, and pickle juice.
  2. Slice potatoes into 1/2 cm thick medallions.
  3. Mix potatoes gently into mayonnaise mixture.
  4. Mix in pickles.
  5. Slice hard boiled eggs into quarters lengthwise and use to garnish potato salad.
  6. Sprinkle green onions over salad.
  7. Sprinkle sunflower seeds over whole dish.
